You will need:
- 225g plain flour
- 100g diced butter
- Pinch salt
- Sift your flour into a bowl & add in your diced butter, rub together with your fingertips until the mixture resembles breadcrumbs.
- Add a pinch of salt, add 2-3- tbsp of water and mix into a firm dough.
- Knead the dough gently on a floured surface.
- Wrap the pastry in cling film and leave to firm whilst preparing the filling.
All delicious fillings can be made as a one-pot wonder, chop lots of your favourite vegetables and braise with your protein of choice. Once cooked, roll out your dough on a floured surface, encase into your pie mould (whether this is one large pie or small individual pies), cut out enough of the dough for the lid and top once filled with your tasty filling. Oven cook for approx. 15 minutes or until pastry is golden brown (egg wash is optional).
